DIRECTIONS:
1. Sift the flour and salt into a large bowl. Roughly break the butter in small chunks, add them to the bowl and blend into the dough.
2. Make a well in the bowl and pour in about two-thirds of the cold water, mixing until you have a firm rough dough adding extra water if needed. Cover with cling film and leave to rest for 20 mins in the fridge.
3. Place the diced potatoes in 1 pint of boiling water and simmer until soft and the water has reduced by half. Add the ground beef , onions, salt and white pepper and reduce to an almost dry consistency. Remove and let cool.
4. Remove the dough from the fridge and allow to come to room temperature. Roll the dough into circles 6" in diameter and add 2 tbsp of the mixture in the center. Fold dough in half and crimp the sides to form a seal. Prick two air holes in the top of the dough.
5. Brush the top of the pasty with egg yolk and place on a baking tray. Baker at 350 f for 45 minutes.
