  Pork Belly

INGREDIENTS:

3lbs Pork Belly

Salt

Pepper

Garlic

 

 

DIRECTIONS:

1.Liberally cover the pork belly in salt, pepper and crushed garlic and refrigerate for 4 hours. Remove from fridge and wash the outside of the pork in cold water to remove the moisture from the salt cure.

2. Place a raised platform/basket (at least 3 inches from the base) in a pressure cooker and fill with 2 inches of water. Place pork on the platform/basket and steam for 30 minutes. Remove pork.

3. Score the skin of the pork in a cross hatch. This will allow the pork to self baste. Liberally salt the skin of the pork and leave for 1 hour.

4. Roast the pork for 45 minutes at 375f or until the skin becomes moderately crispy. Remove from the oven and cut the pork into squares and sauté the remaining sides until they caremelize. Remove and serve.
