  Seafood Chowder

INGREDIENTS:

  • 1lb mixed calamari, clams, shrimp

  • 1 pint milk

  • 1 pint heavy cream

  • 1/2 cup white wine

  • 1/2 cup madiera

  • 1/2 cup brandy

  • 3 large potatoes, peeled and cut into 1/2-inch cubes

  • 1/2 onion, finely chopped

  • 2 tbsp corn flour

  • 1/4 tsp chile oil

  • Salt, black & white pepper to taste

DIRECTIONS:

1. Pour the milk and cream in a saucepan with the potatoes and onion. Bring to a boil. Bring the heat down to a low simmer, and reduce the mixture for 30 minutes. Mix in the corn flour and thicken.

2. Add the white wine, Madeira and brandy and simmer for a further 10 minutes.
2. Pour into a blender and add the seafood. Puree on high for 10 minutes. Season with salt, black and white pepper. Serve with drops of chile oil.
