INGREDIENTS:

3 tbsp Cumin

3 tbsp Chipotle Mayonnaise

1 cup diced Cherry Tomatoes

1 can Kidney Beans
-
1 can Black Beans

1 tbsp Cider vinegar
-
1 diced Pepper

DIRECTIONS:
1. Place all the ingredients in a saucepan. Simmer for 1 hour (adding more water as necessary).
2. Remove from the heat and allow to cool overnight.
3. Slowly reheat and simmer for 30 minutes.
4. Serve with rice, shredded cheese, red onion and cilantro.
